Instructions:
Olive oil should be heated over medium-high heat in a sizable pan or tagine pot.
Sauté the onion and garlic for 3–4 minutes, or until tender.
Cumin, paprika, cinnamon, ginger, turmeric, coriander, and cayenne pepper should be added. Cook for 1-2 minutes, stirring occasionally, until aromatic.
Add the red bell pepper, sweet potato, and chickpeas. To blend, stir.
Add the veggie broth and salt and pepper to taste.
The sweet potato should be soft after 30 to 40 minutes on low heat and a covered simmer.
Add the chopped cilantro and lemon juice after removing the pan from the heat.
Serve alongside bread or couscous.
